Favorite Foods

We have some new favorites for dinner right now. When we were on South Padre Island earlier this summer I ordered a variation of a Caprese Salad at a wonderful deli. All I can say is "Yum"! I've finally got the pesto the way we like it and with tomatoes ripe, I made this:


So good! I think I could eat the whole thing myself.




A main dish we have been enjoying is hash. Have you ever made it? Super easy and a good way to use up leftovers. Baked or waved potatoes fried in some olive oil, add onions, maybe some peppers, or mushrooms, and then  whatever meat you have. We like smoked sausage. But leftover roast or meatloaf is also good.



Saute until the potatoes are nice and crispy. Add a salad or vegetable and meal is done! Easy, peasy!

Cucumbers, tomatoes, and onions with sour cream and lemon juice.

My dinner plans are for a salad of mixed greens, topped with dried cranberries, walnuts, goat cheese, and cubed turkey breast - all with a drizzle of olive oil. Thank you for your good ideas!

Well I can assure you if my husband sees another beansprout he will probably leave. :) I want to try your hash, I too would like it better with sausage.
I always enjoy your post and hearing from you Cindy to me your the next Martha! So creative.

Yummy...potato hash :)
I used to make it for dinner quite often when our kids were younger, it's been a while since I've made it though.
Makes me hungry just thinking about it :)

Yum! I do make potato hash frequently. We're have nachos tonight since it's family movie night. The only time dinner is served on tv trays while we watch a movie!

Boy do I feel stupid! I never thought of throwing leftover meatloaf in with potatoes - ours usually goes down the disposal. I'm not real fond of leftovers, but this I can handle! I'm really going to miss having fresh tomatoes and cucumbers - they just didn't do that well around here with first too much rain, and then too much heat. Thanks for the ideas!
